Love these Tags!


So Jessica over at Oh that frikken DUCKIE tagged me in her latest post Love these Tags and this is my first time being tagged in a post (which of course is super awesome)! So, she posted 11 questions for me (and the other people she tagged) to answer. Then, I create 11 questions of my own for you to answer. Simple and fun!

Here's Jessica's questions along with my answers:

1. How would you describe your blog to a stranger?
My blog is my personal blog. As of right now, its something I write on about my P90X Adventure, things I cook, eat and what i can wear because of it. I am going to put more things up like future trips, reviews about certain products, races/marathons I am going to run and etc. But being a mother of 2, on P90X and cooking...finding the time to blog has been a challenge.

2. What is your favorite blog and why?
My favorite blog that got me interested in blogging back in the first place is Wendy's Lookbook.  I have been a fan of hers from the day she started her YouTube channel.  Yes, I am a closeted YouTuber.  I really got hooked when I saw her infamous scarf wearing magic :). Check It!
She is simply amazing, gorgeous, and if I had all the money in the world, I would ask her to be my stylist and make her take me shopping.  :).

3. What is one fashion trend that you think you can't pull off and why? (i.e., tights under shorts, platform heels, hot pants, etc.)
I can not pull off a baseball hat. I would love to sport one, but I feel really silly in them. I have a odd shaped head and I swear they look ridiculous on me. I rather wear visors or beanies. 

4. What would you consider to be your greatest accomplishment thus far?
My greatest accomplishment thus far is being a young mother, of course!  I don't know what other amazing miracle that one human can do but bring two human beings on this Earth and still look hot! (when I want too)

5. How would you describe your style?
Totally laid back and Neutral. I do not stand out by any means, and I don't need to or even want to either. My closet does not have alot of  color, majority of my clothes are black.  I like my clothes to match and keep me warm (im always cold because im hypothyroid). Put it this way, I'm no fashionista. One thing I do best is wear appropriate clothes at appropriate occassions, thats about it.  I love when there is mandatory dress code...lol.

6. What is your favorite item in your wardrobe and why?
That perfect fitted bra and panties...just wearing a sexy pair of undergarments under ugly mom gear makes me happy in the inside...lol.

7. Who is your fashion idol?
I do not have an idol, but if I can go back in time...I would love everyone to dress in the 1920s or 1950s. I love the dresses in those eras.  I am obsessed with Mad Men, one of AMC tv series. I love the hair, makeup and dresses.

8. Your biggest fear?
Where to start? ha ha.  HEIGHTS, MOST DEF!!

9. Your favorite beauty product EVER?
 I could not live without CARASS original soap, Target Brand Witch Hazel and I.D. bareViamins skin rev-er upper. This is my facial regimen. My acne has been gone ever since I have been using these products. 

10. What is one current TV show that you would love to be on?
Survivor! Instant Diet (wanting it or not) and Amazing Adventure! If I can survive the island and the follow castmates (unique personalities), I think I can do anything.

11. What do you hope to accomplish through your blog?
Inspire or put a smile on someones face when they read it, Im happy.  Its really an outlet for me to have, thats mine.  I am getting quite forgetful and if one day I have no memory, I have something to read or check back if I need to.  Maybe one day my daughters will want to read this and know what I did while they were napping/sleepin or at school.

Got Crabs?

I went to the Newman Youth Sports Alliance Annual New York Steak & Crab Feed Dinner this weekend.  My parents are active members and I thought to support them by going with my BFF.

I lost a half of pound the next day! Haha.  I think I ate about 4 whole crab bodies with no legs that was boiled and chilled.  I ate some soggy salad and few bites of steak. I didnt cave into the pasta they gave out before the steak and crab.  Im no fool, I will not let myself get full off of bread and carbs. I also had 1 bottle Smirnoff Ice Green Apple Bite.  Its really good. The event turned out great. About 400 people showed up. My mom won a Keurig with K-cups and accessories.  My beautiful mother was in charge of the jello shots and boy, did she do her job well. She got one grandma take 2 shots and was responsible for getting few handful of people tipsy or drunk.  I left before the dancing because I had to drive my friend back home (30 mins) and drive myself back to the bay area (1-1/2 hours). All in all, a grand time at that.

P90X Steak and Arugula Salad Recipe

I love my meat, especially steak.  I really did cut down my steak intake to once a month.  I used to eat it more than 5 times a month. When I do eat steak, I make mine P90X style. I try to look for a lean cut as well.

 I never ate arugula before p90x, but I am eating it more often now.  I probably did have some in a mix salad but not by itself as its own salad. It is so good with balsamic vinaigrette. You dont need a lot of dressing because the flavor of the natural herb gives the salad all the flavor you need.  It has a peppery mustard taste to it. It is a required taste, so I am not going to say that everyone will like it. With that said, do try it at least. I have always said, "Don't knock it til you try it".  I really hate it when people say they hate things that they never tried.  Drive me bonkers!  Well there are exception to every rule tho. For example, I am soooooo afraid of heights, so I am not going to like sky diving unless someone pays me 1 million dollars to do it...lol.

Anyways, this dish is pretty simple but tasty. 


WHAT YOU NEED:

6 ounces top sirloin
2 cups arugula
1/2 pint cherry tomatoes, halved
1/2 cup canned artichoke hearts, drained
2 tablespoons balsamic vinaigrette 


HOW ITS DONE:

1) Grill or Broil steak until done, about 7 to 10 minute on each side.
Cool and Cut into 1-inch slices

2) Toss together the arugula, tomatoes, and artichoke hearts and arrange on plates. Top with the steak and drizzle with balsamic vinaigrette. ( I added carrots to mine)

Cut the Excess Fat (if any) and Drink with Green Tea ;)

P90X Chicken Salad Recipe


WHAT YOU NEED:

6 ounces boneless, skinless chicken breast halves
2 tablespoons low-fat mayonnaise
3/4 tablespoons Dijon mustard
2 tablespoons green onions, diced
1/8 teaspoon black pepper
1/8 teaspoon fresh dill
1/4 cup celery, diced

WHAT YOU DO:

1)  Poach Chicken.  Let it Cool and Dice. (I used tongs to hold and diced)
2) Combine all the Ingredients and Mix Well.
3) Served Chilled or As Is.



Other than measuring instruments, its not very messy to make


Served on bed of 2 Cups Romaine Lettuce

My 30th Birthday!!

All day long, it was like any other kids being sick day. Today, my 1 year old is cranky, sick, teething and wanting to be connected to my hip all day long.  My 6 year old is slow and almost late for school. She is hyper after school, whining, spilling things and accidentally dropped a full length mirror on the one year old.  Um, Can I have a freaking break? To those of you who think being a full-time stay at home mom thinks its easy job, then you are not a full-time stay at home mom.  I cannot wait to work outside of the home...at least a part-time job. 

Once my husband came home, all I wanted was to sleep in my bed with no interruptions.  Listening to a toddler cry all day is really draining.  I need to find those ear plugs.  Well, after 10 minutes of laying on my bed, I got up to get ready for a sushi dinner.  I never plan to do anything for myself on my birthday, so I didn't know who was going. Should we bring the kids or leave them home with the in-laws? At this point of the day, I just wanted to get pretty.  I looked like a hot mess all day and I wanted to look pretty decent on my special milestone day.

I cannot say that I had a lot of amazing birthdays. The 4 birthdays that I cherish the most are:

My 7th Birthday : My first birthday in the US with my parents (adopted)

My 8th Birthday : My Barbie Party at a Roller Rink. I was dresses as a gymnastic barbie.

13th Birthday :  My mom booked me and my 4 close friends at a hotel with a indoor pool and had a slumber party. 

My 19th Birthday : I went to Vegas for my first time and it was my first time getting out of California without my parents O_o.

Those are my favorites...because the rest were surprise birthday parties ruined by people who just cant be happy for you. Winter birthdays just plain sucks or other special occasions were first....OH thank you Valentine's Day! Stupid over-rated day of the year. Yeah, I got problems just like any other people...lol. Well there is only 11 more minutes left for my birthday...I'm going to spend it with the hubby watch MTV...ha ha. Nite!

Drinking while on P90X


So I am feeling little under the weather and totally in a funk, so my hubby took me to the Golden States Warriors game.  I know! I always have said, "If you are sick or dont feel well, stay home!" But this mother of 2 had an opportunity to go out, so I went!  It was a much needed date night and I dont regret doing it.  Im not going to lie, I did take couple shots of Jagermeister (Serving Size: per 1 oz serving Calories: 103 Total Fat: 0g Carbs: 11g Protein: 0). It tastes like sweet black liquorice...I think me and Jack Daniels have to see other people...lol.  P90X advises you not to drink but  never says dont drink during the program. If you do, drink wisely.  All you have to do is choose the right alcohol choices just like you do with your food. 

Well it ONLY took me about an hour to get ready...you should see me in two hours ;).  Just want to show you that I will no longer crop my body in pictures...I am workin really hard to look this good, why not show it off...tastefully.  In two weeks, I will be in Vegas. I can be classy, but dont get it twisted...I love to be sassy too.

P90X Vegetable Soup Recipe

So I'm feeling under the weather and I am really craving Pho (Vietnamese Noodle Soup) right now.  I know, I should make a better choice today and make something warm and brothy on my own.  I usually make my Home Made Ginger Chicken Soup when someone in the family is sick, or we go out to eat pho. I didn't have the right chicken parts to make the chicken soup so I looked at the P90X recipe book.

I think I didn't want to make the vegetable soup because the list of produce was insane...but looking back to the other recipes I  have made...this is the norm.  So After a big trip to Trader Joe's, I bucked up and made the soup.  WOW, am I glad that I did. It sure hit the spot.  It is filling and delicious and after the prepping of the veggies...it was just drop it in the pot and stir and wait.  My sister in law once said that I probably can make the best Pho if I wanted to. I think she is right...but for right now, its vegetable soup!


WHAT YOU NEED:


10 Cups fat-free Chicken Broth, low sodium  (Only 2 Cartons of Chicken Broth)
4 Red Potatoes, cut into 1 inch cubes  (1 bag of baby red potatoes)
4 Cps onions, quartered  (1 Large onion)
1 Cup carrots, sliced 1 inch thick  (used baby carrots)
3 Cups celery, sliced 1 inch thick  (1 medium stalk and 1/4 stalk)
2 cups zucchini, sliced 1 inch thick  (3 medium Size)
8 ounces tomato sauce, canned  (TJ's organic tomato, tomato sauce)
2 cloves garlic, minced
1/4 bunch fresh parsley, chopped
1/4 bunch cilantro, chopped (I didn't use any)
dash black pepper (season to taste)

WHAT YOU DO:

1) In a large stockpot, combine the chicken broth, potatoes, onions, carrots, and celery. Bring to a broil, reduce heat to medium-high, and simmer until the potatoes are tender, about 30 minutes.

2)Add zucchini, tomato sauce, garlic, parsley, and cilantro. Reduce heat to medium-low and cook or 10 to 15 minutes ore, or until the zucchini is just tender. Season to taste with black pepper and serve.

3) If desired, add protein powder just before serving (I didnt do this)


Chop Veggies and Put it in A Pyrex Baking Dish

My First Time Making P90X Vegetable Soup...Why did I wait so long to make this bowl full of goodness...I dont know.  It is Super Easy and Only takes Less than an Hour to make.  I would write a whole review, but need to workout!! The recipe is worth waiting for.  I will update later!

Weight Loss Update: Feb 2012

So 5 more days and it is My 30th Birthday!! June 14, 2011, I made a goal for myself that I will try to lose at least 30 pounds before my 30th Birthday Party. My deadline is March 2, 2012. Here is a chart of my weight loss progress. Before January 1, 2012...I didn't put too much effort and my all on my weight loss. If I did the normal lazy way of losing weight, I probably would be more than 30 pounds lighter right now. My lazy way to get to my goal faster would have been eating less than 1200 calories and go run all day. I did the right approach and have changed my fitness lifestyle in a healthier way. I knew I was going to gain weight due to P90X. I did gain muscle weight as I was slimming down. Even if I didn't lose 30 pounds, I am going to be proud of myself. I am just going to be happy that I lost the most unwanted part of my body, my post baby jelly belly. And Hey, lets not forget my hatred with my love handles too.

LEE: Live . Love . Be Lean: P90X Lemon - Garlic Chicken Recipe: WHAT YOU NEED: 1/4 cup fresh lemon juice 2 tablespoons molasses 2 teaspoons Worcestershire Sauce 4 garlic cloves, chopped 2 lb bonel...

P90X Lemon - Garlic Chicken Recipe


WHAT YOU NEED:

1/4 cup fresh lemon juice
2 tablespoons molasses
2 teaspoons Worcestershire Sauce
4 garlic cloves, chopped
2 lb boneless, skinless chicken thighs (I used chicken drumsticks sometimes as pictured.)
1/4 teaspoon black pepper
cooking spray
lemon wedges n parsley sprigs is Optional.
Large Baking Dish and Aluminum Foil is Optional.


HOW I GOT IT DONE:

1)(My WAY)Add the first 4 ingredients into a 1 gallon zip lock freezer bag and add chicken. "massage" the bag evenly to spread the marinate onto the chicken pieces.
1)(P90X Way) Combine first 4 ingredients in a nonreactive dish and add chicken. Cover and marinate in refrigerator 1 hour, turning occasionally.
2)Marinate the chicken for 1 hour or more.
3)Once the Chicken is done marinating.  Preheat the Oven to 425.
4) (My Way) For easy Cleaning...Put 3 sheets of Aluminum Foil on.
4) (P90X Way) Scrubbing Dishes... coat the baking dish with cooking spray.
5) Empty the contents into a large baking dish. Arrange the chicken evenly into the dish. Sprinkle Salt and Pepper.
6)Bake at 425 for 20 minutes, basting occasionally with marinade. Bake without basting for 20 minutes more or until chicken is done. Serve with lemon wedges and garnish with parsley, if desired.

P90X Shrimp Stir Fry - Phase I, Level I

WHAT YOU NEED

6 Ounces Shrimp, peeled
1/4 Tablespoon low sodium soy sauce
1/2 teaspoon rice vinegar
1/4 cup fat free chicken broth
1/4 teaspoon garlic, minced
1/4 teaspoon ginger, minced
1/2 cup red onion, sliced in wedges
1/2 cup broccoli florets
1-1/4 cups snow peas, trimmed
1-1/2 cups mushrooms, halved
1/4 cup yellow bell pepper, cubed
1/4 cup canned water chestnuts, drained

LETS MAKE SOME SHRIMP-LICIOUS MAGIC

1. Rinse and Peel Shrimp and Drain Well. Set aside.
2. Heat the Soy Sauce, Rice Vinegar, and 2 Tablespoons of the Chicken Broth in a saute or Large fry pan over medium heat. I would combine all ingredients to one big measuring cup or a bowl.
3. Add All the Vegetables to the pan and continue to saute, stirring and adding more broth as necessary. 
4. Add Shrimp when the vegetables are halfway cooked and saute until the vegetables are tender and the shrimp are cooked to perfection...try not to overcook them.

This recipe is made for someone like me.  I have been eating 1800 Calories a day. There is a lot of ingredients but you will use all the "pantry" items throughout the whole week/Until its gone. It is rather expensive to eat in at home and it is also time consuming to plan and prep and cook for yourself. I measure every ingredient and cook for myself first. With the left over ingredients, I throw it in the pan and cook for my family.  They love P90X recipes...but they can indulge if they want to...:).  I ate this all by itself.  My family ate it over white rice.

Stomach got flatter.

Gravity is not my best friend at all.  Since the weight loss, my chest has been pretty sad.  With two kids, breastfeeding and weight loss, they look pretty beaten up and not as perky as they used to be.  I can't run in this top at all. Triangle Bikini Tops do not have any support.  I got this bikini to wear to Day Spas. Its either this or going commando...lol.  I do not feel comfortable wearing a two piece at a beach or water park. I hope to get a monokini this summer. I will work hard to have the goods to rock it!



This is my goal dress.  I have not worn this dress out before.  I bought this dress 3 years ago. It is size Small from Forever 21. If you shop there, you know the quality of clothes is okay. My pet peeve from Forever 21 and Macys is that their zippers on dresses are hard to zip at times. After P90X, I will get into this dress. Hopefully, the zipper will not be an issue. 
I can breathe...

So this 1 piece is not very flattering. It was the only bathing suit I could find in a San Diego trip in September that had three of my criterias. 1) It must cover my stomach. 2) It must have built in bra to support my bust. 3) One that is a spaghetti strap style (I hate tan lines).  For the past 7 years, I don't shop for a swim suit unless I really need one. The last one before this was a maternity one, and we allknow how those make you feel.








I hope to look and feel like this in a 1 piece after P90X. :).
