Homemade Recipes: Diet Tacos


 I haven't posted any recipes in a while, so here you go. This is my very filling, easy and healthy taco recipe. Well, maybe not a recipe because I just used what I had leftover in the fridge.  I'm not much of a sauce girl in the first place, so this can be pretty bland for some of you. But I think this turned out really tasty. I didn't add a picture of my jalapenos for heat and flavor tho, because it was an after thought. It taste like chicken with very fresh pico de gallo salsa. :). Enjoy!

WHAT YOU NEED: (got all my ingredients from Trader Joes and chicken from Costco)

 6-8oz of boneless skinless chicken breast
 1/4 cup cucumbers
 1/4 cup tomatoes
 1 Tablespoon red onion
 fresh lemon juice
1 whole wheat flour tortillas

 Jalapenos (optional but recommended) :)
 Aluminum Foil (optional but recommended) for people who hate washing dishes!!

 WHAT TO DO:


Preheat Oven to 350.  I laid aluminum foil in a baking dish for easy cleaning.

             In a baking dish put 2 Tbs of EVOO (extra virgin olive oil). Cut your chicken to smaller pieces to cook faster. Bake your Chicken for 15-20 minutes or until its lightly golden brown.
  Chop Chicken like this.
Let it cool to room temp.
Chop Cucumber
Minced
measure 1/4 cup and set aside
Chop Tomatoes (I used pearl tomatoes)
Measure 1/4 tomatoes
Chop a Red Onion
1 Tbs of Red Onion
Whole Wheat Tortilla, Chicken, Cucumber, Tomatoes, Red Onion
Squeeze Lemon Juice
Ta-Da!

Weight Loss Update: April 2012

Ha! What weight loss??  I have gained 3 pounds back. :(. I have been running more than doing any P90X exercises. You know that feeling when you feel like someone is watching/looking at you and when you look, someone is watching/looking at you? Well, I have been having a lot of that feeling lately. Why you ask? Well, my Muffin Top is staring back at me recently and its making a comeback!  It is so hard to ignore, what a bitch! LOL. It just don't want to disappear and go away. Yes, I am at fault because I have been feeding it oh so goody goodness this last past month.  I will change that real soon. 

Starting May 1st, I will restart my good eating habits. I know it will only last until my Cabo San Lucas  trip in the summer. :).  Hey, its better than nothing, right? Right!  I haven't been eating crap crap, just crap. Mostly sugary candies...and my kryptonite...Nachos!  Yeah, I said it.  I been to few sporting events this month and well...I indulge a little. Okay, a lot!  You are what you eat. I am a big fat nachos with all the fixings. Oh, I'm delicious!

In a serious note. I will continue to be a great role model and start eating healthier again. I will not eat Nachos for 3 months!  With that being said...here are the last two Nachos I ate. [insert the saddest face here]

I just wish that my stomach looked as good as my legs.  But then, you use your legs without even thinking about it. Ugh, its gonna be hard to lose this monster of a beast.  It is extra hard after having two beautiful daughters. As you can see from before and after pictures in my past posts, my daughter helped in with my current tummy bulge, saggy fun bags and major tiger strips. The great stuff that you will now have to dodge when you become pregnant in your future...lol.

I will make a vlog stating all the great stuff you have to face. I will tell you what your mother will never tell you. Your Welcome!  Well, gonna burn some calories by continuing my spring cleaning. Blog you guys later!  xx.

My lil Fam Bam went to the Oakland Athletics Game last week. Aubree just turned 17 month old. They sure grow up fast :'(. I wanted to take a photo with the girls before I forget.  I like to take a monthly photo of my girls up to age 2.  I think I did good with Aubree except for her 13th month. Don't quote me on that tho, I probably missed more than once...hee. Hubby was getting red vines at Luckys and we were playing around the car as we waited for him to come back. Moments like these are what I love being a mom. Obviously, Aubree doesn't like to look straight at the camera...lol.

When my husband and I first were dating in 2001, we probably went to half of the A's home games that year.  We come early for batting practice and would sit in the bleachers. The Giambi Brothers (Jason and Jeremy) were on the team.  Golden Glover Eric Chavez, Sexy Johnny Damon, Miguel Tejada, and Terrence Long.  Man, those were the days. Anyways, my love of baseball is slowly fading away.  I don't have a favorite baseball team and I rather play than watch it. We only went this night because my brother in law didn't sell his tickets. Nonetheless, it was a great family outing.

Training Time: SF DIVA Half Marathon

Hi Everyone! For the last week I have been trying to train for my half marathon that's coming up next weekend.  I only ran 2 times in the last 5 days though.  Saturday, April 21st I ran 8 miles at the high school track and field and it took me about 1:30 minutes to run it.

My friend, Karen and I ran a "Quarter Marathon" =) yesterday at a lake.  We basically ran 6.55 miles. Our finish time was 1:04:41. She tracked our time with her Garmin Forerunner 405CX.  Need me one of those. Ha! I am planning to get that or a fitbit. Here's my current stats below =).

After running with Karen, I feel more at ease. I woke up sore today but less nervous about completing the half marathon.  At first, my goal was to get a great finish time but now just completing a half marathon is a better goal for me at this point. P90X and few mini vacations kinda threw off my training for the half marathon but at least I'm more fit than what I was 6 months ago.  There will be other half marathons and marathons in my near future. I will focus more on my training in those for sure to get a better finish time. As of right now, just crossing the finish line with no injuries is all I'm asking from myself =). Have you guys been in any long distance races before? How do you get ready for them? Thanks in advance!
