Quick and Cheap Chicken Soup Recipe

When it comes to cooking, I like simple and easy things to cook. The faster I get to eat it, the better.  The less money I put into it...even better! When ever I'm watching my figure. I do not eat a lot of carbs,  my weakness.  I go on a high protein diet.  When you lack carbs in your diet, you tend to get hungry a lot quicker.  At least for me it does, and that day was no exception.  So I wanted to cook something warm and hearty.  To get the satisfying full feeling that I was not getting for a long extended time period.  That feeling of wanting to get full, I end up making some kind of soup or stew. I probably have over 5 different Chicken Soup recipes under my belt, but those take some time to cook.  The night before, we shopped at Trader Joes, so I went to the kitchen to see what I can come up with. After seeing what we had, this is what I came up with:

1. Cut the Chicken Breast into big bite size pieces.  2. Cook Pieces of Chicken Breast in EVOO (Extra Virgin Olive Oil) about 2 TBS (tablespoon)
3. Cover with lid to Cook Faster. This also makes the chicken moist.

4. Add Asian Vegetable Stir Fry Mix into the pot.


5. Saute and Continuously stir the vegetable and chicken together until the vegetables are al dente (not too raw yet not over cooked)

1 Quart of Chicken Stock

6. Pour whole container of stock into the pot. Bring it up to a boil and Stir and Mix ingredients together into a nice harmony.
7. With a ladle or a big spoon scoop cooked veggies and chicken into a bowl. Add your choice of seasoning.

Yum! Eat like this!

Thursday Thoughts: Gift Giving

As usual, I hear everyone complain that gift giving is impersonal, if you get a gift card or money! What the Hell? Just be happy that someone thought of you and gave your ungrateful ass something! I really hate the Holidays lately because majority of people are celebrating it for the wrong reasons.  Now its just another day where people have the reason to bitch, bitch and more bitch.

Here's my two cents on gift giving...MONEY, MONEY, MONEY! I am the worst gift-er giver ever. Okay, let me take that back. I am the best gift giver, when I DO give a gift. But I suck on giving a gift on my free will. Understand? No, okay. So in a non-selfish way, I just don't think of giving a gift to someone unless there are reasons to. I don't stop and think to myself and say "Who should I give a gift to, today"?

I'm gonna be really REAL with you right now, even though I am really truthful and honest as often as I possibly can (which gets me in trouble sometimes).  Like, don't ask if you can't handle Here are the only time I go out of my way and get something for you. *clears throat...wait for it. 

I only give a gift when me or my kids are invited to a birthday party, bridal/baby shower, and CHRISTMAS. If you are under 18 yrs old, majority of the time you will get $10-$20 with a card. Or you will get something that you asked for or something related to the theme of your birthday party.  i.e. If I see a elmo will most likely see a Elmo character toy. So Beware what you send me. lol.

If you are over 18 yrs old, you will get $20+ or a giftcard. with a card. It depends on how much I like you. Like, if you are my sister, I will give you more than $20 are not just a person to me. Best friends!! Duh! Majority of the time, I take out my sisters to lunch or dinner on their birthdays, usually before or after since they are so incredibly busy all the time. *tear.  We usually go shopping somewhere and they would see something and I will get them something.

One time, my oldest sister saw a Chi hair straightener and oh before I go on, this is like month or 2 before her birthday. I got it for her. And near the register, I always tell them "So this is for your birthday, just in case I".

This other time, because we were talking/joking about it. I gave a friend at the time a rabbit vibrator for her birthday. Yes, the one you saw and heard about in 'Sex in the City'. I don't know if she use or still has it but at the was something me and another person pitched in to get for her. Its more of a gag gift, maybe a neccessity? lol. But if she uses it, bonus! I personally do not own any such technology so that was my very first and last purchase. EVER. Okay, over share.

In semi-rare occasions, I do give gifts like I stated above. BUT I usually give you money or gift cards. Why? Because I rather you pick out the thing(s) you want, rather than me indecisively choose something you don't need or already have. If you are disappointed, that's on you. Why? because I really thought of you at the time of when I had to get in the car and drive to the ATM and Hallmark (or CVS, Walgreens, or Target) to give you a gift that I have a choice to give or not to give. I really do think of your benefit on the gift I give you. Its not impersonal. I give it a lot of thought and thought that this route works for the best.
